After more than 1h30 of stressing the U7 Pro AP over 6GHz channel rather than being connected on the U6 Enterprise, I can confirm stable connection. Either there's a bug in mt7925e related to WiFi 6E or there's a weird incompatibility with Unifi's U6 Enterprise AP on that band.
