I ran the tests with some changes in a PPA:

While this does not have the journalctl logs (I tried to get them in
another run but it didn't spill any), I think being unable to write to
/var/redis/log can be the issue (I ran into
https://forums.percona.com/t/valkey-start-fails-on-linux-server/36985/2
and https://stackoverflow.com/a/76449903 - which is a similar issue)

The patch d/p/debian-packaging/0001-Set-Debian-configuration-
defaults.patch in redis does set the logfile to /var/log/redis/redis-
server.log, and valkey might not have the permissions to write to it.
