I think I've met the same issue and found the cause, confirmed on the
NVIDIA egl-wayland Github repository (please see
https://github.com/NVIDIA/egl-
wayland/issues/175#issuecomment-3139123407).

In short it seems that NVIDIA drivers with version >= 560 need
libnvidia-egl-wayland1 with a version > 1:1.1.13-1build1 in the Ubuntu
repository in order to make the Wayland Platform correctly detect the
driver (otherwise it falls back to Mesa llvmpipe).
