We've run into the same issue at our company with SSSD/LDAP users on Ubuntu.
In our case we use "AuthInfoRequired username,password" option when adding the printer which forces a login prompt when sending print jobs. We can manually specify the correct username/password each time. But the "Remember password" checkbox does nothing. No keyring item is created and it prompts for username/password every time. I tested with a local user account (not SSSD/LDAP), and found the behaviour was also a bit strange. The prompt pulls in the correct username for the current user, but the "Remember password" option still doesn't seem to work.
