So, this has gotten a bit more interesting... As it turns out, after purging unwanted packages from the installed system, Calamares does an autopurge, which is what's removing kdialog (and probably also BTRFS and XFS utilities and cryptsetup). Hopefully explicitly seeding these packages will be enough to fix this.
