I can see memory-related oopses happening in the core kernel, not
related to graphics. But it is occurring in the gnome-shell process so
it makes sense you would experience a freeze.

The most likely explanation for that is faulty RAM. You should try
running one of these overnight to see if there are any problems with the
RAM:
