Many thanks for the pointers. They've enabled me to narrow things down. So it seems the problem is not with autofs after all; it is actually a problem with Thunar. There was a Thunar process running with the --daemon argument and it appears that once you have browsed to the share in the Thunar UI, if the daemon is running it will keep the nfs share mounted.
