when the keyboard is set back to pc105 gdm starts again:

here my configuration:
support@newmoon:/etc$ cat default/keyboard
# KEYBOARD CONFIGURATION FILE

# Consult the keyboard(5) manual page.

XKBMODEL="pc105"
XKBLAYOUT="de"
XKBVARIANT=""
XKBOPTIONS=""

BACKSPACE="guess"
support@newmoon:/etc$ sudo dpkg-reconfigure keyboard-configuration
Your console font configuration will be updated the next time your system
boots. If you want to update it now, run 'setupcon' from a virtual console.
update-initramfs: deferring update (trigger activated)
Trigger für dracut (108-3ubuntu3) werden verarbeitet ...
update-initramfs: Generating /boot/initrd.img-6.17.0-6-generic
support@newmoon:/etc$ cat default/keyboard
# KEYBOARD CONFIGURATION FILE

# Consult the keyboard(5) manual page.

XKBMODEL="applealu_iso"
XKBLAYOUT="de"
XKBVARIANT="mac"
XKBOPTIONS="lv3:lalt_switch"

BACKSPACE="guess"
support@newmoon:/etc$

hopefully this helps other users.

best regards
Franz
