Public bug reported:

The "Main Menu" editor no longer shows the listings for installed
applications.

This may be related to how the 26.04 LTS preview now handles filename
restrictions.

Example, non-snap apt install of firefox package from (ppa:mozillateam/ppa) :

xdg-desktop-menu install /usr/share/applications/firefox.desktop

xdg-desktop-menu: filename 'firefox.desktop' does not have a proper vendor
prefix
A vendor prefix consists of alpha characters ([a-zA-Z]) and is terminated
with a dash ("-"). An example filename is 'example-firefox.desktop'
Use --novendor to override or 'xdg-desktop-menu --manual' for additional info.

Which will not load until the format encoding parser passes validation.

Temporary workaround:

sudo ln -s /usr/share/applications/firefox.desktop
/usr/share/applications/mozilla-firefox.desktop

Will bypass the issue, while not impacting the same .desktop file
deployed unchanged since 24.04 LTS.

Looking forwards to the LTS release this year, Cheers =)
