Thanks. This is very helpful. Based on all this, this appears to be a
bug in how Ubuntu runs the current Gnome platform runtime rather than an
issue with Typesetter.

Unfortunately there's not much I can do on the Typesetter side since the
app is just using the standard GTK4 font fallback mechanism. This bug
needs to be fixed in Ubuntu's font rendering stack. Can you report it to
Ubuntu using their bug report mechanism? Tell them that it seems to be
affecting all flatpak apps running the current Gnome runtime, and feel
free to link to this discussion here.
