Looks like the fix required is in the libgnome-volume-control library,
pulled in as a subproject for GNOME shell. The Wireplumber changes
exposed a faulty assertion.
Workarounds are,
wpctl settings bluetooth.autoswitch-to-headset-profile false
or downgrading wireplumber back to 0.5.12
