There was some confusion in the upstream MRs about this, and in fact we do still need to patch GNOME shell.
With just the Pipewire fix released, I still see crashes. I manually applied the Wireplumber fix as well and still saw the same crash. I then rebuild GNOME shell with https://gitlab.gnome.org/GNOME/libgnome- volume-control/-/merge_requests/31 applied and confirmed the bug is fixed with that. The Pipewire and Wireplumber fixes are still useful to have, they were just not the main fixes required to fix the crash.
