This is expected behaviour in 0.4.17-1ubuntu4 at least. Auto-switching
is hard-coded to a select few applications,

Otherwise it depends on the stream being tagged with a media role that
is allowed to auto-switch, tools like gst-play and pw-record don't have
such a role.

Allowing anything that touches the mic to auto-switch to HSP/HFP could
otherwise degrade the desktop experience. I'll mark the Wireplumber side
of this as invalid.
