Heinrich, could you test if only the following rules allow you to
convert the file, instead of allowing a possibly unnecessary unix rule?
For that you can add the following rules to /etc/apparmor.d/local/gs:

  owner file rw /mnt/**.@{gs_file_ext},
  owner file rw /media/*/**.@{gs_file_ext},

and reload the ghostscript profile with:

sudo apparmor_parser -r /etc/apparmor.d/gs
