Empathy will probably be the official GNOME IM client at some point, it got rejected for GNOME 2.22 because it's not stable enough yet but will be proposed again for 2.24. Empathy has experimental support for audio/video but the code is disabled by default because it does not works pretty well. As for the backends, jingle and sip should work pretty well.
