I can reproduce the issue at my side.

This regression is due to our delta added at the last merge:

[UBUNTU] Enable NX in all Secure Boot variants and drop strictnx variant

This basically removed the build flag: --pcd
PcdUninstallMemAttrProtocol=TRUE

where it has been stated:

"Another known issue is that there are broken grub versions which get things 
wrong in case EFI_MEMORY_ATTRIBUTE_PROTOCOL is present. edk2 enabled this on on 
x64 end of last year so it is present in 2025-02 + newer."
