It sounds like https://gitlab.gnome.org/GNOME/mutter/-/work_items/2431 although that's closed now. The original reporter suggested it was caused by a lack of memory or an error in the kernel graphics driver. Certainly web browsers are well known for triggering such issues.
Next time the problem happens, please run: free -h and check the number under 'available'.
