Since this issue occurs during installation, I'm not sure how to change the kernel at this stage.
However, since the installation can still succeed without the JBOD config, I tested this build on a normal 26.04 environment (on another local disk) and tried to write data (by copying an OS image into the mounted folder) to the JBOD config disk. Fortunately, I was able to reproduce the same issue this way (see dmesg_7.0.0-22.log), and it seems this issue does not occur with the test build (see dmesg_7.0.0-19.log). For the block configs and mount info, please check "lsblk.log" and "mount.log".
