Also I'm considering the possibilities of Ventoy related problems, or IO failures on the USB Key. Would you retest on a different USB key if you have one, directly written to the device (so not using Ventoy), holding other variables constant?
If that still fails for you, would you provide the journal output from the failure along with a fresh set of logs? Also a tar of /target/var/lib/apt/lists would be interesting if you don't mind.
