It's possible that your video hardware can't run that resolution. Also, you
xorg.conf file looks really empty. This may be fine, but try adding some
things:
To the Screen section:
DefaultDepth 24
Option "metamodes" "1680x1050"
SubSection "Display"
Modes "1680x1050" "1280x1024"
EndSubSection
To the Device section:
Driver "intel"
I think that Intel is right... if it's not, then take that back out.
