Okay after reading this again I have an idea what the problem is: PulseAudio needs a mixer control like "PCM" or "Master" but alsa does not support software mixers for my card. That's not a problem for me I can use my external mixer but pulseaudio does not like that... What a crap ;) I'm going to ask in the PulseAudio IRC.
