The problem was with the real->protected switch of gfxboot, relying on some stale values in the processor, which is a corner case of x86 which just can not be efficiently emulated. Xen recently (-unstable tree as of today, i.e. 3.3) switched to emulating all realmode instructions, so this is not a problem any more for Xen.
