You can disable all the buttons in the gdmsetup. Go to System / Administration
/ Login Screen Setup (or "sudo gdmsetup"). On the Login "Local" tab, disable
the property for the Action Menu.
It is also possible to change single buttons. Check the file /etc/gdm/gdm.conf,
search for AllowLogoutActions.
