mystictim, /etc/gnome/defaults.list is meant as a read-only file where the GNOME default mimetypes are listed. You shouldn't modify it. Your method is an intrusive workaround and is not acceptable as a way of customizing what's choosable in the Media tab of the Nautilus preferences.
As far as I can tell, what determines the options in that tab is the mimetypes that applications report they are capable of handling in their .desktop files.
