Huh.
Fixed the issue by setting anti-aliasing to "true" in my .fonts.conf.
<edit mode="assign" name="antialias"> <bool>true</bool> </edit>

Rendering issues are only experienced when it is set to "false".

I've attached my current .fonts.conf in case it's of any use.
