Ok, I've gotten through more of that manual install after 'server' install now.
On doing dpkg-reconfiguer xserver-xorg I note that when it gets to the bit about monitor auto-detection and I let it attempt this the screen goes blank, but only briefly, in the same way as it did, permanently, when trying the default install. In my specific case this is a 100% black/blank screen with the exception of two character cells being solid white (as if there are text cursors at both locations).
