this works for sure - at least for me, tried it twice.
delete ev-metadata.xml
open some document in evince
close evince
add
<entry key="sizing_mode" type="gchararray" value="free"/>
right under <document uri="last-used-value" atime="1207731907">
save
open some doc in evince
** Attachment added: "xdpyinfo.log"
