TJ - I suspect you're seeing a kernel issue rather than xorg, however it's hard to be certain. Can you do a few tests?
First, ssh into the box from another machine and reproduce the error. Are you able to still use the ssh session? If so, then it is an Xorg crash. If not, then it's a kernel crash. If it's an Xorg crash, please collect a full backtrace - see http://wiki.ubuntu.com/X/Backtracing for directions. Another thing to test is if you can reproduce the issue when using the "vesa" driver.
