Same thing happening here.  I've seen it suggested to use nvidia-
settings...well, at 640x480, all that happens when you click on the
nvidia-settings dialog box is that it jumps around on the screen.  You
can use the tab key to access its options, however correcting the
settings has no effect.  On top of it all, as you probably have found
out, dpkg-reconfigure xserver-xorg now skips the entire video
configuration part and jumps right to keyboard configuration.  This is
pretty much a show-stopper, if you ask me, being as it is that correctly
detecting one's display-related hardware is accomplished easily by
modern operating systems.  The only way I got it all working was to wipe
out hardy, install gutsy, configure all the display stuff, and then copy
the xorg.conf off to a safe location.  Then I installed hardy again,
installed the ubuntu-provided nvidia drivers, and copy the saved
xorg.conf from gutsy over the one in hardy.  This is a repugnant
solution to have to use.
