So I was just about to uninstall everything and start over after having tried everything on this thread (including consulting my witch doctor for ideas), when I chose to just uninstall/reinstall the exchange plugin. I removed the plugin and deleted the /mail and /exchange directories and then reinstalled the plugin. Guess what; it works again.. Not exactly the best solution, but it will do until a permanent fix is identified.
