Thank you for your suggestion. However, the changes you are requesting
aren't really a bug and require more discussion, which should be done on
an appropriate mailing list or forum.
http://www.ubuntu.com/support/community/mailinglists might be a good
start for determining which mailing list to use.
However as a temporary workaround you might like to rename the item(s) in your
menu:
1. Right-click on your gnome-menu, select Edit menus
2. Find where glchess (gnome-games) is in your menu and rename it,
3. add a launcher for gnome-chess
