In Easytag (whether launched normally or with sudo), the Files in the left pane
are greyed out and I can't drag them in order to edit their tags.
Is this a bug or am I missing something huge here ?

Most probably you are trying to access a disk which is mounted read
only, or is formatted with a read only OS (like NTFS).

You are still having a problem:
I'm not sure it's a right problem as I'm trying to access files on my
regular drive which is Linux (no access problems here) and I've also
tried with sudo.

I don't see what else it can be but a permission problem. Has it always been
like that or the behaviour changed recently?
By the way, you should use gksudo with gui applications, not sudo.
