Tu ouvres une consoles et tu tappes:
mozilla-thunderbird&
mozilla-thunderbird est la commande le & à la fin te permet de garder la
main (bref le shell te rend la main après)
Il y a la complétion avec la touche tab qui rend cela moins pénible.

Étant sous gnome, je ne connais pas adept, mais suppose que dans les
propriétés du paquet, il doit être possible de savoir où se situe le bon
fichier parmi ceux qu'il a installés, du
style /usr/bin/mozilla-thunderbird ou /bin/mozilla-thunderbird.
À défaut, un dpkg -L mozilla-thunderbird donnera la liste des fichiers
installés par le paquet.

(ça prend du temps c'est normal)
Là logiquement ça marche (ce n'est que Tbird quand même !).
Ou peut être un "locate mozilla-thunderbird" mais la solution de Lucien
est bien meilleur.
