The straight up gnome3 archive is considered stable. The Staging and Next repositories are we (the packaging team) upload teh development/tech preview version (currently we are working to upload Gnome 3.11.5).
And Yes, I for one am using both Gnome 3 and Staging, I am not using Next except for testing package builds though.
