There is no real guide toward the actual vcs part of packaging, since there is no real standard here, some teams use svn, others git or bzr and some none at all.
We are migrating to packaging branches on git for ubuntu-gnome[1], however not all packages are there yet. They are setup using git-buildpackage. At some stage I need to document this (or find someone to help document it!)
