evince is good

to edit pdf's you have two options (atleast)

install pdfedit - this takes time to get used to but is useful for minor
editing

ther other option is , if you have openoffice version 3.0 or later is to
install the pdf import extension (available in ubuntu repository) this is
*very useful*

However there are other options where you can export the pdf to a text file
and use the contents
