Hi, Dan. Just scroll down in Quickshot's screenshot list. You'll find the Empathy entries near the bottom if they were the most recent screenshots you uploaded.
To replace them, just click one, then take a new screenshot the same way as before. Quickshot will figure out the rest. Feel free to redo any screenshot if you aren't sure it was right.
