Or just use sbuild, which can also use copy-on-write filesystems. sbuild + overlayfs/aufs is very similar to cowbuilder. sbuild is what the buildds use. It's less customisable than pbuilder (if you have lots of fancy hooks, that you like) but has a significantly better out-of-the-box configuration. And gives way nicer error messages, if you are missing build-dependencies. mk-sbuild in ubuntu-dev-tools knows how to set it up.
