The Ubuntu Desktop ISO contains the [new] ubuntu-desktop-installer as the installer.
The Ubuntu Desktop legacy ISO contains the old `ubiquity` installer, available should problems exist on specific hardware with the new installer. The resulting install should be ~identical with both; the difference being the installer used. Chris g.
