You can work around this by running 'stty iutf8' on the server each time you ssh somewhere. Unfortunately fixing this requires an extension to the SSH protocol - see http://bugs.debian.org/cgi- bin/bugreport.cgi?bug=337041 for the gory details - so it won't be a quick process.
