I agree with Hassan. The "ubuntu-minimal" package should include mandatory package for a server environment with a maximum level of security (no ssh, samba, ... by defaut) But the package should remain on the CD. I think that additionnal server template should be accessible once the minimal installation has been conducted through a ncurse interface.
