I'm confused.  Why would we do this?  Wouldn't this limit the number of
eyes watching the bug mail?  Isn't this a bad thing?  Currently it looks
like only three people are going to see bug mail.

The Ubuntu Studio Bugs Team is still under construction, so to speak. It is an easy way to keep track of who is in the team, as well as making sure they get bug mail. It's an open team.
I announced that the mail list would be deleted a few weeks ago.

We tried making a separate mail list work to our advantage, but technically it was not very feasible. Also, we don't really need one since the launchpad functionality is good enough. If someone wants to discuss something by not having replies posted to the bug report, it can be done in -devel. Our traffic is so low, so that we don't really need separate mail lists for many things.

We do have a separate ubuntustudio-testing mail list. Mainly created to separate big amounts of automatic test results sent to the list, so that they do not flood -devel. Not being used yet, as we haven't set up any routines for testing either. I do see a bigger purpose for that list, though.
