lsmod | grep snd

I believe the command you are looking for is "asoundconf
set-default-card". If you want a GUI for this, install asoundconf-gtk,
but this only handles the very most basic of cases. It will appear as
"System→Preferences→Default Sound Card" on a GNOME system.

I also suggest you read through [0] (specifically the "Reporting Sound
Bugs" section) and file a bug on Launchpad [1].
