I have not tried tethering with an iPhone and Ubuntu Studio. I think it should just be seen by Ubuntu Studio as a wireless access point which you should be able to connect to.
Perhaps someone else on the list can help answer this question? I thought with Ubuntu Studio you might need to install a different network manager tool...was the default network manager of Ubuntu not installed by default? (I'm forgetting that detail at the moment.) I use *WICD *on my Ubuntu Studio and was happy with it.
