Under the Thunderbird version I'm using (v2.0), choose Edit from the
topmost menu, Account Settings, Composition & Addressing. Uncheck
"Compose messages in HTML format".

Also, in regards to HTML posting, I am using Thunderbird -- how do I put
the email into plain text rather than HTML? I cannot find any option for
this.
