I found it by clicking on this page http://loco.ubuntu.com/teams/ubuntu-it which took me to this page https://launchpad.net/~ubuntu-it and then i guessed at which link to click on because i can't read Italian. Hopefully that helps or at least gives you some useful contacts and a place for the pages about Edubuntu? I am not sure what the usual approach is but hopefully someone in there can help.
