Um... only reason I can think of why it won't work would be video drivers and maybe some other hardware devices. I suppose technically you could set X Windows to use the VESA driver which I would have thought would be supported by *most* if not all video cards (although it's not as quick as using the right driver). I think you'd also have to fix the resolution to maybe 1024x768 so it's supported by the variety of monitors that you're likely to come across. Haven't tried it myself so I might be slightly wrong.
