Personally, as you have a single-point-of-failure anyway in the VPS, I would say there's no need for a secondary DNS server, as what would be its use when the VPS is down anyway? So simply set up two nameservers ns1.joshh.co.uk and ns2.joshh.co.uk both on the same IP, that of your VPS in the 123reg control panel. Then configure bind to recognise these nameservers and set up the virtual domain joshh.co.uk (and www, obviously) and all should be well!
