The status icon which the Mail Notification program puts into the tray offers four options when left-clicked: launch the mail reader (you can set this to Evolution or a small number of other clients), open the latest message (by going to the website of the email server), consider new mail as read (i.e. remove the icon), or update the mail status (i.e. check the server again).
