Just had a quick Google search, it came up with this... https://wiki.ubuntu.com/FrameBuffer There is a bit about disabling the Framebuffer or setting a VGA mode in the text mode installer. You need to press F6 on the boot menu, you should be able to add commands to the boot options, maybe try adding nofb between quiet and the -- on the boot options line (press F6 to get the other options menu pop up, then ESC to cancel the popup menu, you should be able to add commands to the boot options then).
